So it pretty much went from Summer to Winter like over night here, So when Breecia suggested we try to make Pumpkin Whoopie Pies I figured why not? Crazy enough I had all the ingredients in the cupboard which is another sign that these cookies where just meant to be made! If you haven’t made the two ingredient pumpkin cookies these are the easiest things to make, it almost feels like cheating!
You literally just mix the can of pumpkin with the spice cake mix, That’s it!
I forgot that pumpkin cookies don’t spread out much so these where just tiny bite size cookies, but that’s OK now we can eat more than one and not feel bad about ourselves 🙂
It was even more crazy that I had cream cheese on hand, I rarely have cream cheese around unless I buy it for a specific reason. So I gave in to the cream cheese frosting, I am usually a buttercream frosting only girl.
They may not be the prettiest things, but these are delicious and SO easy to make! Whoo Hoo…or I should Say WHoo-Pee!!
I am a chocolate chip pumpkin cookie lover and would have felt like I was cheating on my all time favorite pumpkin cookie if I didn’t sneak and make a few of those too 🙂
