Every Sunday we have an open invitation for our kids to eat Sunday dinner with us. Some weeks are definitely better than others. This past weekend we were super busy and didn’t have time to go to the store. But we have found that with three boys as long as there is some sort of meat and bread we are good. We decided to just make whatever we could out of whatever we had in the house. I Love cornbread, but its something I don’t normally make in the summer, But we had the ingredients and its super easy, so….Why not? I decided to make cornbread muffins instead of cornbread because the baking time is cut in half. All you need is a box of Jiffy Cornbread Mix and half a box of yellow cake mix.
Mix both mixes according to both boxes. (Usually I use 2 jiffy mixes and 1 full cake mix, but we didn’t need that many muffins), I only used half of the cake mix and used only 1 box of Jiffy mix, and saved the other half for next time. Spray muffin tin really good and fill cups 3/4 full.
Turn on oven to 350 and bake muffins for 15-20 mins.
